I make these when I have a chocolate craving and they quite honestly taste like the best chocolate brownie truffles. SO decadent, they will satisfy your sweet tooth. Trust me, I have a major sweet tooth but try not to eat too much sugar. This hits the spot. Adapted from Wholefood Simply.
- 1 cup walnuts (100 grams)
- 1 cup almond meal (80 grams)
- 1/4 cup cacao or cocoa (20 grams) (I only ever use cacao which is healthier and they come out perfect
- 12 dates, seeds removed (180 grams) (Sometimes I use 9 or 10, depending on how juicy the dates are. If they are too juicy the balls come out a bit wet)
- 1 tablespoon honey (30 grams) (Also works fine with rice malt syrup)
- 1 teaspoon vanilla extract
- pinch of salt
- Place the ingredients into your processor and blend at high speed until the mixture resembles a fine, sticky crumb. (If the mixture is too crumbly to shape into balls, add two tablespoons of melted coconut oil and blend again)
- Firmly press and shape the mixture into balls. Place in the fridge to set for at least two hours.
- Eat those thangs!
